Moroccan Chicken and Vegetable Tagine

 

If you ever been to Morocco , you might have noticed that Tajine is every where , you can almost say  it's the national dish of the country , if you are planning to pay a visit to this wonderful country , you will have the chance to try many amazing tagines while travelling through morocco . here you go a simple recipe for the delicious chicken vegetable tagine , enjoy .

what is a tagine ?



a tagine is both the name of the dish and the pot in which the dish is cooked in ,it has a cone-shaped lid , there are simple one's and more complicated one's with graphics and colors , for cooking purposes I'd recommend you to use the simple one's .

ingredients :

  • 400 grams of chicken breast or legs , cut them into large chunks ( 1 inch each)
  • 1 big carrot , cut the carrot in half , the chop it into large pieces .
  • 2 large potato and 1 sweet one . chopped into long medium size .
  • 1/2 red capsicum , chop it into large pieces .
  • 1 red  or white onion , sliced into small pieces 
  • 150 grams pumpkin , peel and chop the pumpkin into medium pieces .
  • 1 small chili pepper , sliced thinly ( add it if you want to make thing spicy )
  • 1 can of chickpeas 
  • 1 tomato chopped into small pieces 
  • 2 tablespoons of ras el hanout ( it's a Moroccan spice ) 
  • 1 tablespoon of cinnamon 
  • 2 cloves of garlic , crushed
  • 250 ml of chicken stock ( optional )
  • salt and pepper , for your taste 

steps :


  1. put the Tagine on heat , up to 180 degrees .
  2. add in olive oil  ,in order to fry the chicken until browned ( takes a couple of minutes ), add in the chopped onions while stirring the pot .
  3. add in the garlic chili and fry gently until every thing is translucent .
  4. add in the ras el hanout and cinnamon , then fry for about 30 seconds , add in the chickpeas and chopped tomatoes , make sure to stir well to combine everything .
  5. put in the carrots , the capsicum, the pumpkin ,  potato and sweet potato , and chicken stock , then season with salt and pepper , while stirring everything to well combine .
  6. cover the Tagine with the lid , and let it cook for 60 to 80 minutes ( medium heat , make sure to check the Tagine often you don't want it to be burned .
  7. served hot for the family and friends 

WHAT IF i don't have a Tagine ?

you can cook this simple recipe in any casserole type pot with a lid . but if I'm been honest the taste might defer cause the pot it self adds so many rich and exotic flavours , so if you can get your hand on a tagine It's much better , plus a tagine is not expensive , and you can find them anywhere .

What if I don't have ras el hanout ?

that not a big problem you can just take it off of the recipe , it will slightly effect the flavor , but it will still be delicious so don't worry about it . 
   
here you go a simple yummy Moroccan  chicken vegetable tagine , that you can easily make at home , with ingredients found in every household , i don't know about res el hanout , but you can take that off .
