Broccoli with Roasted Garlic Soup

 Ready to try this delicious , mellow , garlicky soup that will definitely please your taste buds , plus it is healthy for you , and who doesn't want some healthy food in a world dominated with fast unhealthy food , give this recipe a try you will love it and I'm pretty sure it will become a habit for you , and your friends if you shared it with them , although that's easier said than done , so don't be greedy and share this highly pleasant to the test recipe . broccoli is not for every one , hope this recipe changes your mind about this hated vegetable .

ingredients :

  • 1 large , plump head of garlic 
  • olive oil , for drizzling of course 
  • salt
  • freshly ground black pepper ( or just back pepper )
  • 1 large bunch broccoli , about 1 pound ( give or take ) 
  • 2 tablespoons butter 
  • 1 chopped medium onion 
  • 1 large baking potato , peeled & cut into small pieces 
  • 6 cups chicken or vegetable broth ( I'd go with chicken ) 

steps : 

  1. to roast the garlic , heat the oven up to 400 degrees , start by cutting off the top of the garlic head , to make a "lid" , take about half an inch , then drizzle the cut surfaces with a little olive oil , season with some salt and pepper , just a pinch not to much , put the "lid" back on and wrap the garlic with foil & place it on a baking sheet , leave it there  about 45minuts until the garlic is tender and has a golden color , take it out unwrap it and let it cool down , you can use it now or put it in the fridge up to 1 week .                                                                                                                                                                            
  2. take the broccoli , cut the florets from the broccoli stalks , shop the broccoli in a coarse manner ( it does not have to be pretty ) , after that peel the stalks and shop them into a large and irregularly shaped pieces .                                                                                                                                                        
  3. melt the butter in a large sauce pan ( any pan would work ) over medium heat ( don't burn the butter ) , as soon as the butter is melted add the onion and cover the pan , stirring is essential  for about 5 min , until the onion is tender , then put add in the chopped potato and broccoli.                                                
  4. add the choosing broth and let it boil over high heat , partially cover the pot and reduce the heat to low , give it about 30 min until the potato is tender , squeeze in the roasted garlic during the last 5 min , get ride of the hulls . put some salt and pepper in and season it for your taste .                                                                                                                                                                                                          
  5. use a blinder in order to puree the soup , or blend it in the pot using an immersion blender , the soup is ideally served hot .
